
1 cup chopped pecans, divided2cups sugar1 cup vegetable oil 1/4 cup honey 3 large eggs 3 cups all-purpose flour 1 tsp baking soda 1 tsp salt 1 tsp ground cinnamon 1/4 tsp ground nutmeg 1 tsp vanilla extract 3 cups chopped Golden Delicious apples Honey Sauce Vanilla Ice Cream optional
Grease and flour a 12-cup Bundt pan; sprinkle bottom of pan with 1/4 cup pecans - set aside. Beat sugar, oil and honey until blended. Add eggs beating until blended.
Combine flour and next 4 ingredients. Gradually add to sugar mixture beating at low speed until blended. Stir in vanilla, remaining 3/4 cup pecans, and chopped apples. NOTE: This mixture is very thick. I add a little water, about 1/4 cup or less to make it pour more easily. Pour in Bundt pan and bake at 350 degrees for 55 to 60 minutes. Cool 15 minutes and put on cake plate. Pour 1/2 cup Honey Sauce over warm cake. Cool.
Honey Sauce: 1 cup brown sugar, 1/2 cup butter, 1/4 cup honey, 1/4 cup milk. Bring all ingredients to a boil over med-high heat stirring constantly, boil 2 minutes stirring constantly.
